A beer that came back from the dead.

Fair Dym-Kum is a mid-strength smoked wheat beer based on the Polish Grodziskie, a style that disappeared before being brought back to life by Polish homebrewers. Known as the champagne of Poland, it’s pale, crisp and refreshing, with a proper hit of smoke.

This isn’t a beer for everyone. If you like smoked beer, though, this is the sort of thing you’ll want to get your hands on: all that smoke without the weight of a big beer.

Campfire smoke, crackers, subtle saltiness and a clean hoppy bitterness.

Light-bodied, crisp, with a dry, refreshing, hoppy finish.

Main Characters

Pale wheat malt, smoked malt, Styrian Goldings hops and German ale yeast.

Where it started

Our founder Jamie was looking for inspiration for his next homebrew when he stumbled across Grodziskie. He’d never heard of it before, never seen anything remotely like it, and couldn’t just head to the local bottle shop and buy one.

It was a Polish beer with a history unlike anything he’d come across. A beer that tugged at the heartstrings and his connection to his own Polish heritage. A style the Soviets tried to kill for being too Polish. A beer that disappeared before being revived by homebrewers.

The more he found out about it, the more he craved to know what the hell it tasted like.

When we had the chance to brew a festival beer for GABS with a brief of something weird, something different, something people probably hadn’t tried before…we couldn’t look past this one.

Every JKB Beer starts with a question, "What if..."

What if we brewed a beer that was almost lost to history?

We wanted to find out what this weird-sounding beer was actually like.

So we started with the idea based on what we could research and learn, and tried to get as close to what we believed was the original intended experience as possible.

Where we couldn’t get the traditional ingredients, we worked with what we could get our hands on.

The result?

A crisp lager poured straight onto a campfire.
